We all know that fish is good for you. Over the course of the past few years, I have slowly added more fish into our weekly diet; shhhhhh, don’t tell the MGG. Actually, he really has enjoyed the change to eating more fish. We are now eating fish about 2-3 times per week, purchasing wild where possible and choosing fish according to this list. I was able to find a wonderful piece of wild Alaskan salmon at Whole Foods and thought I would show you one of my favorite ways to prepare it. Not only is it quick and easy, it’s delicious too and doesn't take away from the integrity of the salmon.
Pecan-Crusted Salmon with Honey Dijon Glaze
Serves 4
4 6-ounce wild salmon fillets, pin bones and skin removed
Salt and pepper to taste
3 tablespoons Dijon mustard
2 tablespoons honey
½ cup pecans, finely minced
3 tablespoon parsley, minced
¼ plain breadcrumbs (I use Progresso brand)
1 ½ tablespoons olive oil
Preheat oven to 425°F. Spray a baking dish that can fit the salmon with PAM spray. Season the salmon with salt and pepper to taste. Combine the mustard and honey and brush onto the fillets. Mix together the pecans, parsley and breadcrumbs and sprinkle the mixture onto the salmon; drizzle fillets evenly with olive oil. Bake salmon 15 minutes and serve immediately.
