People often ask me what is my most favorite thing to make. Well, its cookies. There is something so magical about a cookie. It’s small, yet mighty. Seriously, look at the joy that a cookie can evoke in a child – their sweet little faces just light up when they see a cookie. This past Christmas I had the privilege of inviting some friends’ children over to decorate cookies for Santa. What a blast we had. None of the cookies would have made the cover of a Martha Stewart magazine. But the memories that were made that day were priceless. These cookies that I’ve made today have rich dark chocolate taste and just the right amount of white chocolate and macadamia nuts. Try one in each hand for maximum happiness.
Chewy Chocolate Cookies with White Chocolate Macadamia Nuts
Makes 5 dozen
1 cup butter, softened
1 ½ cups sugar
1 cup dark brown sugar, packed
2 eggs, room temperature
1 teaspoon vanilla
2 ½ cups flour
½ cup dark cocoa powder
½ teaspoon baking soda
1 teaspoon salt
2 cups white chocolate chunks or chips
1 ½ cups macadamia nuts, finely chopped
Preheat oven to 350. Cream butter and both sugars until light and fluffy. Add vanilla and eggs, one at a time, beating well after each addition.
Combine flour, cocoa, baking soda and salt in separate bowl. Gradually add the flour mixture to the egg mixture and blend just until flour mixture is absorbed. Fold in white chocolate and macadamia nuts.
Drop by tablespoon onto parchment lined cookie sheets. Bake for 10 minutes. Cool 2 minutes on pan and then transfer to a rack to cool as long as you can stand for them to cool.
